Ingredients
4 boneless, skinless chicken breasts (about 6–8 oz each)
4 oz Brie cheese, rind removed and cut into 8–12 slices
1 medium apple (Honeycrisp or Granny Smith work best), cored and thinly sliced or finely diced
1 tablespoon olive oil
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon dried thyme
¼ teaspoon black pepper
½ teaspoon salt
Optional: 1 cup fresh spinach, lightly packed
Optional: 2 tablespoons breadcrumbs
Instructions
- Preheat your oven to 375°F (190°C). Slice a deep pocket into each chicken breast
- Optional: Pound the chicken breasts to an even thickness of about ½ to ¾ inch
- Season both sides of the chicken breasts with garlic powder, onion powder, thyme, salt, and black pepper
- Prepare the stuffing by sautéing spinach (if using) and mixing with apples and Brie cheese
- Stuff the chicken with the apple and Brie mixture, sealing the pockets with toothpicks
- Sear the stuffed chicken breasts in a hot skillet with olive oil for 2-3 minutes per side
- Transfer the skillet (or place the chicken in a baking dish) to the oven and bake for 20-25 minutes until cooked through
- Let the chicken rest for 5-10 minutes before serving
Notes
You can prepare the chicken ahead of time and store it in the refrigerator until ready to cook.
For a vegetarian option, use large portobello mushrooms instead of chicken.
