Description

4 boneless, skinless chicken breasts (about 68 oz each)
4 oz Brie cheese, rind removed and cut into 812 slices
1 medium apple (Honeycrisp or Granny Smith work best), cored and thinly sliced or finely diced
1 tablespoon olive oil
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon dried thyme
¼ teaspoon black pepper
½ teaspoon salt
Optional: 1 cup fresh spinach, lightly packed
Optional: 2 tablespoons breadcrumbs


Instructions

  1. Preheat your oven to 375°F (190°C). Slice a deep pocket into each chicken breast
  2. Optional: Pound the chicken breasts to an even thickness of about ½ to ¾ inch
  3. Season both sides of the chicken breasts with garlic powder, onion powder, thyme, salt, and black pepper
  4. Prepare the stuffing by sautéing spinach (if using) and mixing with apples and Brie cheese
  5. Stuff the chicken with the apple and Brie mixture, sealing the pockets with toothpicks
  6. Sear the stuffed chicken breasts in a hot skillet with olive oil for 2-3 minutes per side
  7. Transfer the skillet (or place the chicken in a baking dish) to the oven and bake for 20-25 minutes until cooked through
  8. Let the chicken rest for 5-10 minutes before serving

Notes

You can prepare the chicken ahead of time and store it in the refrigerator until ready to cook.

For a vegetarian option, use large portobello mushrooms instead of chicken.
