Ingredients
1.5 pounds boneless, skinless chicken breasts or thighs
2 tablespoons olive oil
1/2 cup balsamic vinegar
1/4 cup honey (or maple syrup for a vegan option)
4 cloves garlic, minced
1 tablespoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
Fresh parsley or basil, chopped, for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C). Prepare a 9×13 inch baking dish by lightly greasing it or lining it with parchment paper
- If using chicken breasts, pound them to an even thickness (about 1 inch) to ensure uniform cooking. Place the chicken pieces in the prepared baking dish
- In a small bowl, whisk together the olive oil, balsamic vinegar, honey, minced garlic, dried Italian seasoning, salt, and black pepper until well combined
- Pour the balsamic mixture evenly over the chicken, ensuring each piece is coated. Bake for 20-25 minutes
- After this initial baking period, remove the dish from the oven and spoon some of the pan juices over the chicken. Return the dish to the oven and continue baking for another 10-15 minutes until the chicken reaches an internal temperature of 165°F (74°C)
- Remove from the oven and let it rest for 5-10 minutes before slicing. Garnish with fresh parsley or basil if desired
Notes
Marinating the chicken in the balsamic glaze for at least 30 minutes will enhance the flavor.
For a complete meal, add vegetables to the baking dish alongside the chicken.
