Ingredients
- 2 cups cooked chicken, diced
- 2 cups broccoli florets
- 2 cups cooked rice
- 2 cups shredded cheddar cheese, divided
- 1 can (10.5 oz) cream of chicken soup
- ½ cup milk
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tbsp butter
- Salt, pepper, Italian seasoning
- ½ cup crushed crackers (optional)
Instructions
1. Preheat oven to 350°F; grease 9×13 dish.
2. Sauté onion and garlic in butter 3-4 min.
3. Add chicken, broccoli; cook 2-3 min.
4. Mix in soup, milk, rice, half cheese; season.
5. Transfer to dish; top with cheese, crackers.
6. Bake covered 20 min, uncovered 10 min.
Notes
Use rotisserie chicken for ease.
Blanch fresh broccoli for color.
Sharp cheddar melts best.
Reheat with milk splash.
Gluten-free: Use GF soup/crackers.
