Description

Tini's Mac and Cheese is a creamy, cheesy pasta dish that brings warmth and comfort to your family dining experience. It’s easy to prepare, making it perfect for busy weeknights or special gatherings.

1 pound Elbow macaroni
1/2 cup Unsalted butter
1/2 cup All-purpose flour
4 cups Whole milk, warmed
1 cup Heavy cream, warmed
1 teaspoon Dry mustard powder
1/2 teaspoon Garlic powder
1/4 teaspoon Ground nutmeg
1 teaspoon Salt, plus more for pasta water
1/2 teaspoon Black pepper
8 ounces Sharp cheddar cheese, freshly grated
8 ounces Monterey Jack cheese, freshly grated
4 ounces Mild cheddar cheese, freshly grated
2 ounces Cream cheese, softened and cut into cubes (optional)
1 cup Panko breadcrumbs (optional, for topping)
2 tablespoons Melted butter (optional, for topping)


Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a rolling boil, add the macaroni and cook until al dente. Drain thoroughly and set aside
  2. Prepare the Roux: In a large pot, melt the butter over medium heat. Whisk in the flour for 1-2 minutes until a smooth paste forms
  3. Whisk in Dairy: Gradually add the warm milk and cream to the roux, whisking continuously until it thickens, about 5-7 minutes
  4. Add Seasonings: Stir in mustard powder, garlic powder, nutmeg, salt, and pepper until well combined
  5. Melt the Cheese: Reduce heat to low and add cheeses, one handful at a time, stirring until melted and smooth
  6. Combine Pasta and Sauce: Stir the cooked macaroni into the cheese sauce until well coated
  7. Bake (Optional): Preheat oven to 375°F (190°C). Pour mixture into a greased baking dish, top with panko if desired
  8. Bake and Serve: Bake for 20-25 minutes until bubbly and golden brown. Let rest for 5-10 minutes before serving
