Description
These Blueberry Heaven Cookies are incredibly simple to make, using everyday ingredients you likely already have in your pantry. They bake up perfectly soft and chewy with bursts of sweet, tangy blueberries in every bite.
Ingredients
2 ½ cups All-purpose flour
1 teaspoon Baking powder
½ teaspoon Baking soda
½ teaspoon Salt
1 cup Unsalted butter, softened
¾ cup Granulated sugar
½ cup Light brown sugar, packed
2 Large eggs
1 teaspoon Pure vanilla extract
1 ½ cups Fresh blueberries or frozen, unthawed
Instructions
- Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt
- In a large bowl, cream together the softened butter, granulated sugar, and light brown sugar until light and fluffy
- Beat in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract
- Gradually add the dry mixture to the wet mixture, mixing on low speed until just combined
- Gently fold in the blueberries by hand
- Drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between each cookie
- Bake for 10-12 minutes, until the edges are golden brown and the centers are just set
- Remove from the oven and let cool on the sheets for 5 minutes before transferring to a wire rack

Notes
For a less refined sugar option, you can use coconut sugar instead of light brown sugar.
