Description

Ingredients

2 cups Tapioca Flour
1 cup Milk
½ cup Neutral Oil
1 teaspoon Salt
2 large Eggs
1 ½ cups Shredded Cheese


Instructions

  1. Preheat your oven to 400°F (200°C)
  2. Lightly grease a mini muffin tin or line a baking sheet with parchment paper
  3. In a large mixing bowl, measure out the tapioca flour and set aside
  4. In a small saucepan, combine the milk, neutral oil, and salt. Heat over medium until it begins to simmer
  5. Pour the hot milk mixture over the tapioca flour and stir until it forms a shaggy dough. Let cool for 10-15 minutes
  6. Add the eggs to the cool tapioca mixture and mix well until incorporated
  7. Stir in the shredded cheese until evenly mixed throughout the dough
  8. Scoop the dough into 1-inch balls and place them in the prepared muffin tin or on the baking sheet
  9. Bake for 15-20 minutes or until puffed and golden brow
  10. Let cool for a few minutes before serving warm

Notes

Use a combination of mozzarella and Parmesan for the best flavor.

For dairy-free options, substitute with unsweetened plant-based milk and dairy-free cheese.
