Description

These Broccoli Cheese Balls are a delicious and nutritious snack that your whole family will love. They are easy to make, packed with flavor, and a perfect way to sneak in some veggies.


Ingredients

1 pound Fresh Broccoli Florets
1 ½ cups Shredded Sharp Cheddar Cheese
½ cup Shredded Mozzarella Cheese
¼ cup Grated Parmesan Cheese
2 large Eggs, lightly beate
¾ cup Plain Breadcrumbs
2 tablespoons All-Purpose Flour
1 teaspoon Garlic Powder
½ teaspoon Onion Powder
½ teaspoon Salt
¼ teaspoon Black Pepper
2 tablespoons Olive Oil


Instructions

  1. Prepare the broccoli by washing and steaming until tender-crisp
  2. Drain and mash the steamed broccoli until crumbly
  3. In a large bowl, combine the mashed broccoli with cheeses, eggs, breadcrumbs, flour, and spices
  4. Mix until well combined, then form into golf ball-sized spheres
  5. Chill the balls for at least 30 minutes
  6. Preheat the oven to 375°F (190°C) and grease a baking sheet
  7. Arrange the balls on the sheet and bake for 20-25 minutes or until golden brow
  8. Let cool before serving

Notes

For a gluten-free version, use gluten-free breadcrumbs.

These can be frozen uncooked and baked from frozen.
