Description

These Cadbury Egg Cookies are soft, chewy, and bursting with melty chocolate and crunchy candy shells, perfect for spring celebrations or cozy family nights.


Ingredients

1 cup Granulated Sugar
¾ cup Light Brown Sugar, packed
2 large Eggs
2 teaspoons Pure Vanilla Extract

1 cup Semi-Sweet Chocolate Chips
1 ½ cups Cadbury Mini Eggs, roughly chopped


Instructions

  1. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper
  2. In a large bowl, cream the butter and sugars until light and fluffy
  3. Beat in eggs one at a time, then stir in vanilla
  4. In another bowl, whisk together flour, baking soda, and salt
  5. Gradually mix dry ingredients into wet ingredients until just combined
  6. Fold in chocolate chips and chopped Cadbury Mini Eggs
  7. Scoop dough onto prepared baking sheets, leaving space to spread
  8. Bake for 9-11 minutes until edges are golden brow
  9. Cool on baking sheets for 5 minutes before transferring to a wire rack

Notes

Chilling the dough for 30 minutes enhances flavor and texture.
