- 1 lb (450g) boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 tbsp olive oil
- 1 medium yellow onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 3 cloves garlic, minced
- 2 tbsp Cajun seasoning (use more or less to your taste)
- 1 (8 oz) block cream cheese, softened and cubed
- 2 cups chicken broth
- 1 cup heavy cream
- 16 oz (450g) penne pasta, or other short pasta
- 2 cups shredded mozzarella cheese, divided
- 1/2 cup shredded Parmesan cheese
- 2 tbsp chopped fresh parsley, for garnish
- Salt and black pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and cook the pasta until al dente
- Heat olive oil in a skillet over medium-high heat. Cook the chicken seasoned with Cajun seasoning, salt, and pepper until browned
- Sauté onion and bell peppers until soft. Add garlic and remaining Cajun seasoning
- Stir in chicken broth, then add cream cheese and heavy cream, whisking until smooth
- Add cooked chicken and pasta to the sauce, mixing well. Transfer to a baking dish, top with mozzarella, and bake for 15-20 minutes
Notes
For a milder dish, use less Cajun seasoning.
You can make it ahead of time by assembling it without the cheese topping and refrigerating.
Let it rest after baking for easier serving.
