Description

Cajun Cream Cheese Chicken Pasta Bake is a comforting yet exciting dish that combines the rich and creamy factors of a pasta bake with the zesty flavors of Cajun seasoning. It’s a one-pan wonder that’s perfect for busy weeknights and loved by both kids and adults.


Ingredients

  • 1 lb (450g) boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1 medium yellow onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 tbsp Cajun seasoning (use more or less to your taste)
  • 1 (8 oz) block cream cheese, softened and cubed
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 16 oz (450g) penne pasta, or other short pasta
  • 2 cups shredded mozzarella cheese, divided
  • 1/2 cup shredded Parmesan cheese
  • 2 tbsp chopped fresh parsley, for garnish
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and cook the pasta until al dente
  2. Heat olive oil in a skillet over medium-high heat. Cook the chicken seasoned with Cajun seasoning, salt, and pepper until browned
  3. Sauté onion and bell peppers until soft. Add garlic and remaining Cajun seasoning
  4. Stir in chicken broth, then add cream cheese and heavy cream, whisking until smooth
  5. Add cooked chicken and pasta to the sauce, mixing well. Transfer to a baking dish, top with mozzarella, and bake for 15-20 minutes

Notes

For a milder dish, use less Cajun seasoning.

You can make it ahead of time by assembling it without the cheese topping and refrigerating.

Let it rest after baking for easier serving.
