Ingredients
1 sheet Frozen Puff Pastry, thawed
1/2 cup Prepared Basil Pesto
1 cup Cherry Tomatoes, halved
8 ounces Fresh Mozzarella Cheese, cut into small cubes
2 tablespoons Olive Oil, for brushing
1/4 teaspoon Sea Salt, or to taste
1/8 teaspoon Freshly Ground Black Pepper, or to taste
1/4 cup Fresh Basil Leaves, torn or chopped
Optional: Balsamic Glaze, for drizzling
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper
- Thaw the puff pastry and unroll it onto the prepared baking sheet. If it's a block, roll it into a roughly 10×10 inch square
- Gently score a border about 1/2 inch in from the edges
- Spread the pesto over the central area of the puff pastry, leaving the scored border clear
- Arrange the halved cherry tomatoes and cubed mozzarella over the pesto
- Drizzle with olive oil and sprinkle with salt and pepper
- Bake for 20-25 minutes, or until golden brown and puffed
- Garnish with fresh basil and drizzle with balsamic glaze if desired, then serve warm
