For the Carrot Cake Muffins:
- 2 cups (240g) all-purpose flour
- 1 cup (200g) granulated sugar
- ½ cup (100g) packed light brown sugar
- 2 teaspoons ground cinnamon
- 1 teaspoon baking soda
- ½ teaspoon ground ginger
- ¼ teaspoon ground nutmeg
- ½ teaspoon salt
- 2 large eggs, at room temperature
- ½ cup (120ml) unsweetened applesauce
- ½ cup (120ml) vegetable oil (or other neutral oil)
- 1 teaspoon vanilla extract
- 1 ½ cups (about 2 large carrots) finely grated carrots
For the Crumb Topping:
- ½ cup (60g) all-purpose flour
- ¼ cup (50g) granulated sugar
- ¼ cup (50g) packed light brown sugar
- ½ teaspoon ground cinnamon
- ¼ cup (56g) unsalted butter, melted
Instructions
- Preheat your oven to 400°F (200°C) and line a 12-cup muffin tin with paper liners
- In a small bowl, make the crumb topping by mixing flour, granulated sugar, brown sugar, and cinnamon. Add melted butter and mix until clumps form. Set aside
- In a large bowl, whisk together the dry ingredients for the muffins
- In a separate bowl, whisk the eggs until frothy, then mix in applesauce, vegetable oil, and vanilla extract
- Combine the wet and dry ingredients and mix until just combined. Fold in the grated carrots gently
- Divide the batter among the muffin cups, filling them about two-thirds full
- Sprinkle the crumb topping over each muffin and gently press it dow
- Bake at 400°F (200°C) for 5 minutes, then reduce the temperature to 375°F (190°C) and bake for another 15-18 minutes
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely
Notes
Freshly grated carrots are recommended for better flavor and moisture.
