Description

Cheese Bacon Cob Loaf Dip is a rich and creamy dip served in a hollowed round cob loaf, filled with a delicious mixture of cheeses, crispy bacon, and herbs, perfect for gatherings and entertaining.

1 large round cob loaf (approx. 500-600g)
250g beef bacon, diced
250g cream cheese, softened
1 cup sour cream
1 cup mayonnaise
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
1/2 cup chopped fresh chives (plus extra for garnish)
2 cloves garlic, minced
1/2 teaspoon black pepper
Pinch of red pepper flakes (optional, for a little kick)


Instructions

  1. Preheat your oven to 180°C (350°F). In a large skillet, cook the diced beef bacon over medium heat until crispy. Drain off excess fat and set the bacon aside on a paper towel-lined plate
  2. Carefully slice the top off the cob loaf, about an inch down, to create a lid. Using your hands or a small knife, hollow out the inside of the loaf, leaving a sturdy 1-inch thick shell. Tear the removed bread into bite-sized pieces
  3. In a large mixing bowl, combine the softened cream cheese, sour cream, mayonnaise, shredded mozzarella, shredded cheddar, grated Parmesan, chopped chives, minced garlic, black pepper, and optional red pepper flakes
  4. Gently fold in most of the crispy beef bacon into the cheese mixture, reserving a small amount for garnish
  5. Spoon the creamy Cheese Bacon Cob Loaf Dip mixture evenly into the hollowed-out cob loaf shell. Place the filled cob loaf on a baking sheet
  6. Arrange the torn bread pieces and the cob loaf lid around the filled loaf on the baking sheet
  7. Bake for 20-25 minutes, or until the dip is hot, bubbly, and the cheese is melted and golden. The surrounding bread pieces should also be toasted and slightly crispy
  8. Carefully remove from the oven. Garnish the Cheese Bacon Cob Loaf Dip with the reserved crispy bacon and extra fresh chives. Serve immediately with the toasted bread pieces for dipping

Notes

To prevent sogginess, ensure the dip is not too liquidy, and serve promptly after baking.
