Description

1 pound Boneless, Skinless Chicken Breast, cut into 1-inch cubes
1 medium Yellow Onion, chopped

1/2 teaspoon Garlic Powder
Salt and freshly ground Black Pepper, to taste
1 1/2 cups Long-grain White Rice, rinsed
3 cups Chicken Broth
1/2 cup Milk (whole or 2%)
1/2 cup Buffalo Sauce
1 cup Shredded Sharp Cheddar Cheese
1/2 cup Shredded Monterey Jack Cheese
2 tablespoons Unsalted Butter
2 tablespoons Fresh Parsley, chopped (for garnish, optional)


Instructions

  1. Prepare the Chicken: Pat your cubed chicken breast dry with paper towels and season it with salt, black pepper, smoked paprika, onion powder, and garlic powder
  2. Brown the Chicken: Heat olive oil in a large skillet over medium-high heat, add the seasoned chicken, and cook until browned. Remove and set aside
  3. Sauté Aromatics: Reduce heat, add chopped onion to the skillet, sauté until translucent, then add minced garlic and cook until fragrant
  4. Add Rice and Liquids: Stir in rinsed rice, add chicken broth and milk, bring to a boil while scraping up browned bits
  5. Simmer and Cook: Cover and simmer on low for 15-20 minutes until rice is tender
  6. Combine and Finish: Return chicken to skillet, stir in buffalo sauce and butter until combined
  7. Add the Cheese: Sprinkle cheeses over the top and cover for 2-3 minutes until melted
  8. Serve: Stir gently, let rest, garnish with parsley, and serve immediately

Notes
