  • 2 loaves (16 ounces each) store-bought brioche or dinner rolls (such as King’s Hawaiian sweet rolls or similar, approximately 2430 rolls total)
  • 1 cup (226g) unsalted butter, melted
  • 6 cloves garlic, minced very finely
  • ¼ cup fresh parsley, chopped
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes (optional, for a little kick)
  •  ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • 2 cups (220g) shredded mozzarella cheese
  • 1 cup (110g) shredded sharp cheddar cheese
  • ¼ cup grated Parmesan cheese, plus extra for sprinkling

Instructions

  1. Preheat oven to 375°F (190°C) and grease the baking dish
  2. Cut bread into 1-inch cubes if using large loaves; leave rolls whole or cut large ones in half
  3. Melt butter and mix in garlic, parsley, oregano, red pepper flakes, salt, and pepper
  4. Toss bread pieces in the garlic butter until coated
  5. Mix mozzarella, cheddar, and Parmesan in a bowl
  6. Layer the bread and cheese in the baking dish, pressing down slightly
  7. Cover with foil and bake for 20 minutes
  8. Remove foil and bake an additional 10-15 minutes until cheese is bubbly and golde
  9. Serve warm, optionally garnished with parsley or additional Parmesa
