Ingredients
2 lbs small potatoes, quartered or halved
1 tbsp olive oil
1 (1 oz) packet dry ranch seasoning mix
1 tsp garlic powder
½ tsp onion powder
¼ tsp black pepper
1 lb pre-cooked smoked sausage, cut into ½-inch thick rounds
1 ½ cups shredded cheddar cheese
2 tbsp fresh chopped parsley, for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper
- In a large bowl, combine the cut potatoes with olive oil, toss until coated, then add ranch seasoning, garlic powder, onion powder, and black pepper and mix well
- Spread the seasoned potatoes on the baking sheet in a single layer and roast for 20 minutes
- After 20 minutes, add sliced smoked sausage to the pan and stir gently. Return to the oven and roast for another 15-20 minutes until potatoes are tender
- Remove from oven, sprinkle with cheese, and return to the oven for an additional 5-7 minutes until cheese is melted

Notes
Ensure potatoes are cut uniformly for even cooking.
Do not overcrowd the baking sheet to achieve crispy potatoes.
