A refreshing and fulfilling Chicken Caesar Pasta Salad that combines the classic flavors of Caesar salad with hearty pasta, perfect for busy evenings, potlucks, or meal prepping.
Ingredients
12 ounces rotini or penne pasta, cooked al dente and cooled
2 cups cooked chicken breast, shredded or diced
1 large head romaine lettuce, chopped into bite-sized pieces
1 cup croutons, classic Caesar style
½ cup grated Parmesan cheese
½ cup prepared Caesar dressing
¼ cup olive oil
2 tablespoons fresh lemon juice
1 teaspoon Dijon mustard
1 clove garlic, minced
¼ teaspoon black pepper
Salt to taste
Instructions
- Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the chosen pasta and cook until al dente. Drain and rinse with cold water. Set aside
- Prepare the Dressing: In a small bowl, whisk together Caesar dressing, olive oil, lemon juice, Dijon mustard, garlic, and black pepper. Adjust seasoning with salt if needed
- Combine Ingredients: In a large bowl, mix cooled pasta, chicken, and romaine lettuce
- Dress the Salad: Pour half the dressing over the salad, toss gently, and add more dressing if desired
- Add Cheese and Croutons: Stir in Parmesan cheese and add croutons just before serving to retain crunch
- Serve: Toss the salad again, garnish with more Parmesan, and enjoy!
