A bubbling, creamy, savory Chicken Spinach & Mushroom Low Carb Oven Dish that is incredibly easy to make, packed with flavor, and perfect for a healthy dinner.
Ingredients
2 tablespoons Olive Oil
1.5 pounds Boneless, Skinless Chicken Breasts, cut into 1-inch cubes
1 teaspoon Garlic Powder
1/2 teaspoon Onion Powder
1/2 teaspoon Dried Italian Seasoning
Salt and Freshly Ground Black Pepper, to taste
1 tablespoon Unsalted Butter
8 ounces Cremini Mushrooms, sliced
5 ounces Fresh Spinach
1/2 cup Low Sodium Chicken Broth
8 ounces Cream Cheese, softened
1/2 cup Heavy Cream
1/2 cup Grated Parmesan Cheese, plus extra for topping
1/4 cup Shredded Mozzarella Cheese, plus extra for topping
2 tablespoons Fresh Parsley, chopped, for garnish
Instructions
- Preheat your oven to 375°F (190°C)
- In a large bowl, toss the cubed chicken breasts with olive oil, garlic powder, onion powder, Italian seasoning, salt, and pepper until well coated
- Heat the butter in a large oven-safe skillet or Dutch oven over medium-high heat. Add the seasoned chicken and sear for 3-4 minutes per side until lightly browned. Remove the chicken and set aside
- Add the sliced mushrooms to the skillet and sauté for 5-7 minutes until softened. Add the spinach and stir until wilted
- Pour in the chicken broth, scraping any browned bits from the skillet. Reduce heat to low, add cream cheese and heavy cream, and stir until melted and smooth
- Stir in Parmesan and mozzarella until combined. Adjust seasonings as needed
- Return the seared chicken to the skillet, stirring to coat with sauce. Top with extra cheese and bake for 18-22 minutes until cooked through and bubbly
- Garnish with parsley and let rest before serving
Notes
For a spicier version, add red pepper flakes or cayenne to the sauce.
