Description

A bubbling, creamy, savory Chicken Spinach & Mushroom Low Carb Oven Dish that is incredibly easy to make, packed with flavor, and perfect for a healthy dinner.


Ingredients

2 tablespoons Olive Oil
1.5 pounds Boneless, Skinless Chicken Breasts, cut into 1-inch cubes
1 teaspoon Garlic Powder
1/2 teaspoon Onion Powder
1/2 teaspoon Dried Italian Seasoning
Salt and Freshly Ground Black Pepper, to taste
1 tablespoon Unsalted Butter
8 ounces Cremini Mushrooms, sliced
5 ounces Fresh Spinach
1/2 cup Low Sodium Chicken Broth
8 ounces Cream Cheese, softened
1/2 cup Heavy Cream
1/2 cup Grated Parmesan Cheese, plus extra for topping
1/4 cup Shredded Mozzarella Cheese, plus extra for topping
2 tablespoons Fresh Parsley, chopped, for garnish


Instructions

  1. Preheat your oven to 375°F (190°C)
  2. In a large bowl, toss the cubed chicken breasts with olive oil, garlic powder, onion powder, Italian seasoning, salt, and pepper until well coated
  3. Heat the butter in a large oven-safe skillet or Dutch oven over medium-high heat. Add the seasoned chicken and sear for 3-4 minutes per side until lightly browned. Remove the chicken and set aside
  4. Add the sliced mushrooms to the skillet and sauté for 5-7 minutes until softened. Add the spinach and stir until wilted
  5. Pour in the chicken broth, scraping any browned bits from the skillet. Reduce heat to low, add cream cheese and heavy cream, and stir until melted and smooth
  6. Stir in Parmesan and mozzarella until combined. Adjust seasonings as needed
  7. Return the seared chicken to the skillet, stirring to coat with sauce. Top with extra cheese and bake for 18-22 minutes until cooked through and bubbly
  8. Garnish with parsley and let rest before serving

Notes

For a spicier version, add red pepper flakes or cayenne to the sauce.

This dish can be prepared ahead of time and stored for meal prep.
