Description

Classic Blueberry Buckle is a simple, comforting dessert featuring a moist cake base studded with blueberries and crowned with a buttery, cinnamon-spiced streusel topping. It's perfect for breakfast, brunch, or dessert, evoking nostalgia and warmth.


Ingredients

1 ½ cups All-Purpose Flour
¾ cup Granulated Sugar
2 teaspoons Baking Powder
½ teaspoon Salt
½ cup Unsalted Butter, softened
1 Large Egg
½ cup Full-Fat Milk
1 teaspoon Pure Vanilla Extract
1 ½ cups Fresh or Frozen Blueberries (do not thaw if frozen)
½ cup All-Purpose Flour
½ cup Granulated Sugar
½ teaspoon Ground Cinnamo
¼ cup Unsalted Butter, cold and cut into small pieces


Instructions

  1. Preheat your oven to 375°F (190°C) and grease and flour an 8×8-inch or 9×9-inch baking pa
  2. In a small bowl, combine the ½ cup flour, ½ cup sugar, and ½ tsp cinnamon. Add the cold butter and use your fingertips to cut the butter into the dry ingredients until the mixture resembles coarse crumbs. Set aside
  3. In a medium bowl, whisk together 1 ½ cups flour, ¾ cup sugar, 2 tsp baking powder, and ½ tsp salt
  4. In a separate large bowl, cream the softened butter until light and fluffy. Beat in the egg until well combined. Stir in the milk and vanilla extract
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined, being careful not to overmix
  6. Gently fold in the blueberries
  7. Pour the cake batter into the prepared baking pan, spreading it evenly
  8. Sprinkle the streusel topping evenly over the batter
  9. Bake for 40-50 minutes, or until a toothpick inserted in the center comes out clea
  10. Cool the Blueberry Buckle in the pan on a wire rack for at least 15-20 minutes before slicing and serving

Notes

You can use other berries or add fruits like diced apples or peaches for variations.

For a gluten-free version, substitute all-purpose flour with a 1:1 gluten-free baking flour blend.
