Classic Blueberry Buckle is a simple, comforting dessert featuring a moist cake base studded with blueberries and crowned with a buttery, cinnamon-spiced streusel topping. It's perfect for breakfast, brunch, or dessert, evoking nostalgia and warmth.
Ingredients
1 ½ cups All-Purpose Flour
¾ cup Granulated Sugar
2 teaspoons Baking Powder
½ teaspoon Salt
½ cup Unsalted Butter, softened
1 Large Egg
½ cup Full-Fat Milk
1 teaspoon Pure Vanilla Extract
1 ½ cups Fresh or Frozen Blueberries (do not thaw if frozen)
½ cup All-Purpose Flour
½ cup Granulated Sugar
½ teaspoon Ground Cinnamo
¼ cup Unsalted Butter, cold and cut into small pieces
Instructions
- Preheat your oven to 375°F (190°C) and grease and flour an 8×8-inch or 9×9-inch baking pa
- In a small bowl, combine the ½ cup flour, ½ cup sugar, and ½ tsp cinnamon. Add the cold butter and use your fingertips to cut the butter into the dry ingredients until the mixture resembles coarse crumbs. Set aside
- In a medium bowl, whisk together 1 ½ cups flour, ¾ cup sugar, 2 tsp baking powder, and ½ tsp salt
- In a separate large bowl, cream the softened butter until light and fluffy. Beat in the egg until well combined. Stir in the milk and vanilla extract
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined, being careful not to overmix
- Gently fold in the blueberries
- Pour the cake batter into the prepared baking pan, spreading it evenly
- Sprinkle the streusel topping evenly over the batter
- Bake for 40-50 minutes, or until a toothpick inserted in the center comes out clea
- Cool the Blueberry Buckle in the pan on a wire rack for at least 15-20 minutes before slicing and serving

You can use other berries or add fruits like diced apples or peaches for variations.
For a gluten-free version, substitute all-purpose flour with a 1:1 gluten-free baking flour blend.
