Description

This Comforting Chicken Rice Casserole is a cozy, creamy dish with tender chicken, fluffy rice, and a cheesy topping.


Ingredients

Scale
  • 3 cups cooked shredded or cubed chicken
  • 3 cups cooked white or brown rice
  • 2 (10.5 oz) cans cream of chicken soup (or mushroom)
  • 1 cup frozen peas or mixed vegetables
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • ¼ teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 2 cups shredded cheddar cheese, divided

Instructions

1. Preheat oven to 350°F (175°C).

2. In a large bowl, stir together the chicken, rice, cream of chicken soup, peas, salt, pepper, smoked paprika, onion powder, and garlic powder.

3. Pour the mixture into a 9×13-inch casserole dish that’s been sprayed with nonstick spray.

4. Top with 1 cup of shredded cheddar cheese.

5. Bake for 20–30 minutes, or until hot and bubbly.

6. Remove from oven, sprinkle the remaining cheese on top, and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days.

Freeze for up to 3 months; thaw overnight in the fridge before reheating.
