Description

Flavorful Cowboy Mushrooms are a hearty dish that combines rich, earthy mushrooms with a blend of spices, creating a savory, smoky, and slightly spicy experience perfect for any meal.


Ingredients

  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 2 pounds cremini mushrooms, wiped clean and quartered (or sliced)
  • 1 large yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper (adjust to your spice preference)
  • 1/2 teaspoon dried oregano
  • 1/4 cup vegetable broth (or mushroom broth)
  • 2 tablespoons fresh parsley, chopped, for garnish
  • Salt and freshly ground black pepper to taste

Instructions

  1. Prep your ingredients: wipe mushrooms, quarter them, dice onion, and mince garlic
  2. Heat the skillet over medium-high heat with olive oil and butter until melted
  3. Sauté the mushrooms in a single layer for 5-7 minutes until golden brown and moisture is released
  4. Remove browned mushrooms from the skillet and set aside
  5. Reduce heat to medium, add diced onion, and cook for 4-5 minutes until translucent
  6. Add garlic and spices, cooking for another minute until fragrant
  7. Deglaze with vegetable broth and return mushrooms to the skillet
  8. Simmer for 2-3 minutes, season with salt and black pepper to taste, and garnish with parsley before serving

Notes

Feel free to adjust the spice level according to your taste.

For a creamy version, add cream cheese or heavy cream at the end.
