Cozy Three Cheese Zucchini Rollatini is a rich and satisfying dish featuring tender zucchini strips filled with a creamy mixture of ricotta, mozzarella, and Parmesan cheeses, baked in marinara sauce for a delightful and comforting meal.
Ingredients
3–4 medium Zucchini
2 tablespoons Olive Oil
1 teaspoon Salt
½ teaspoon Black Pepper
15 ounces Ricotta Cheese
1 cup Shredded Mozzarella Cheese
½ cup Grated Parmesan Cheese
1 large Egg
¼ cup Fresh Parsley
2 cloves Garlic
1 teaspoon Dried Oregano
24 ounces Marinara Sauce
Optional: Pinch of Red Pepper Flakes
Instructions
- Preheat oven to 375°F (190°C). Wash and trim zucchini, then slice lengthwise into thin strips using a mandoline or knife
- Lay zucchini strips on baking sheets, drizzle with olive oil, and season with salt and pepper. Bake for 10-12 minutes until tender, then let cool
- In a medium bowl, mix ricotta, 1 cup mozzarella, ½ cup Parmesan, egg, parsley, garlic, oregano, and remaining salt and pepper
- Spread half the marinara sauce in a baking dish. Fill each zucchini strip with 1-2 tablespoons of cheese filling and roll them up, placing seam-side down in the dish
- Pour remaining marinara over rolls and top with remaining mozzarella and Parmesan. Cover with foil and bake for 25 minutes. Remove foil and bake for another 10-15 minutes until bubbly
- Let rest for 5-10 minutes before serving
Notes
Drain ricotta for a less watery filling; consider customizing cheese and sauce options for different flavors.
