1 pound Fresh Asparagus, woody ends trimmed, cut into 1-inch pieces
1/2 cup Vegetable Broth
1 cup Heavy Cream
1/2 cup Grated Parmesan Cheese
1/4 teaspoon Black Pepper
1/4 teaspoon Salt
Fresh Parsley, chopped, for garnish (optional)
Pinch of Red Pepper Flakes (optional)


Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the bow tie pasta and cook according to package directions until al dente. Reserve about 1 cup of the starchy pasta water before draining
  2. Sauté the Aromatics: Heat the olive oil in a large skillet or deep pan over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant
  3. Add the Asparagus: Stir in the chopped asparagus pieces and sauté for 3-5 minutes until tender-crisp and bright gree
  4. Deglaze and Simmer: Pour in the vegetable broth and bring it to a gentle simmer for 1-2 minutes
  5. Create the Cream Sauce: Reduce the heat to low. Stir in the heavy cream, Parmesan cheese, salt, and black pepper. Cook for 2-3 minutes until the sauce thickens
  6. Combine and Toss: Add the drained bow tie pasta to the skillet and toss until coated in the sauce
  7. Adjust Consistency (if needed): If the sauce is too thick, add a splash of reserved pasta water. Stir until the desired consistency is reached
  8. Serve and Garnish: Taste and adjust seasoning. Serve immediately, garnished with fresh parsley and extra Parmesan if desired

Notes

For a lighter version, you can use milk instead of cream.
