This Creamy Bacon Carbonara Pasta is a comforting and satisfying dish that combines creamy sauce, crispy beef bacon, and perfectly cooked pasta for an easy weeknight meal.
Ingredients
1 pound Spaghetti or Fettuccine
8 ounces Beef Bacon, diced
2 large Whole Eggs
2 large Egg Yolks
1 cup Freshly Grated Parmesan Cheese
2 cloves Garlic, minced
2 tablespoons Olive Oil
1/2 cup Heavy Cream
1/2 teaspoon Freshly Ground Black Pepper
1/2 cup Reserved Pasta Water
2 tablespoons Fresh Parsley, chopped
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil, add spaghetti and cook according to package directions until al dente. Reserve 1 cup of pasta water, then drain the pasta
- Crisp the Bacon: In a skillet, cook the diced beef bacon over medium heat until crispy. Remove bacon and leave the fat in the skillet
- Prepare the Egg and Cheese Mixture: In a bowl, whisk together whole eggs, egg yolks, Parmesan cheese, and black pepper until smooth
- Sauté Garlic: Add olive oil to the skillet with bacon fat, and cook minced garlic until fragrant
- Combine and Toss: Add drained pasta to the skillet and toss to coat
- Create the Creamy Sauce: Off the heat, pour heavy cream into the pasta, then slowly add the egg and cheese mixture while tossing to prevent scrambling
- Emulsify: Gradually add reserved pasta water while tossing until the sauce is smooth and glossy
- Finish and Serve: Stir in crispy bacon, adjust seasoning, and serve garnished with extra Parmesan and parsley
