Description

This Creamy Chicken Broccoli Soup is a comforting one-pot meal with tender chicken, fresh broccoli, and a silky creamy broth.


Ingredients

  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 3 cups cooked chicken, shredded or diced
  • 4 cups fresh broccoli florets
  • 4 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp all-purpose flour (optional)
  • Salt and pepper to taste

Instructions

1. Heat butter and olive oil in a pot over medium heat.

2. Sauté diced onion until translucent, then add garlic.

3. Sprinkle flour and cook, then whisk in chicken broth.

4. Add broccoli and cook until tender.

5. Stir in chicken and heat through.

6. Add cream and Parmesan cheese and stir until creamy.

7. Season and serve hot.

Notes

Use fresh broccoli for best flavor and texture.

Add cream last and keep heat low to avoid curdling.

Can freeze leftovers for up to 3 months.
