Description

  • 2 tbsp unsalted butter (or olive oil)
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz cremini or white button mushrooms, sliced
  • 2 tbsp all-purpose flour
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard (optional)
  • 1 cup sour cream (full-fat for best texture)
  • 1/2 tsp smoked or sweet paprika (optional)
  • Salt and freshly ground black pepper, to taste
  • 8 oz egg noodles, cooked according to package directions
  • 2 tbsp fresh parsley, chopped, for garnish[file:1]

Instructions

1. Cook egg noodles according to package directions; drain and set aside.

2. In a large skillet, melt butter over medium heat. Add chopped onion and sauté 3–4 minutes until softened.

3. Stir in garlic and cook 30 seconds until fragrant.

4. Add sliced mushrooms and cook 4–5 minutes until they release moisture and begin to brown.

5. Add ground beef, breaking it up with a spoon, and cook until browned and no longer pink. Drain excess fat if needed.

6. Sprinkle flour over the beef mixture and stir for 1 minute to coat.

7. Pour in beef broth while stirring, then add Worcestershire sauce and Dijon mustard. Bring to a gentle simmer.

8. Reduce heat to low and let the sauce thicken for 3–5 minutes, stirring occasionally.

9. Turn heat to low and stir in sour cream and paprika until the sauce is smooth and creamy. Do not let it boil.

10. Season to taste with salt and pepper.

11. Serve the creamy ground beef stroganoff over hot egg noodles and garnish with chopped fresh parsley.

Notes

For a lighter version, use Greek yogurt in place of some of the sour cream and keep heat very low after adding it.

If the sauce gets too thick, thin it with a splash of beef broth, milk, or pasta cooking water.

Make it ahead by preparing the stroganoff sauce and storing separately from the noodles; combine when reheating.

Serve with a fresh salad or a warm appetizer like spinach artichoke dip or bacon crostini for a complete meal.
