This Creamy Herb Chicken Bake is a satisfying, simple, and comforting dish that brings the family together with its rich, herby flavor and tender chicken.
Ingredients
1.5 lbs boneless, skinless chicken breasts or thighs
1 tbsp Olive Oil
1 small Onion, finely diced
3 cloves Garlic, minced
8 oz Cream Cheese, softened
½ cup Heavy Cream
½ cup Chicken Broth
2 tbsp Fresh Parsley, chopped (or 1 tbsp dried)
1 tbsp Fresh Thyme, chopped (or ½ tbsp dried)
1 tsp Dried Oregano
½ tsp Salt
¼ tsp Black Pepper
Pinch of Red Pepper Flakes (optional)
½ cup Grated Parmesan Cheese (optional)
Instructions
- Preheat your oven to 400°F (200°C). Pat the chicken dry and season with salt and pepper
- Sear the chicken in olive oil for 2-3 minutes per side until golden brown. Remove from skillet
- In the same skillet, sauté onion until softened, add garlic, then stir in cream cheese until melted. Gradually whisk in heavy cream and chicken broth
- Mix in the herbs and seasonings, bring to simmer, then assemble chicken and sauce in a baking dish
- Bake for 20-25 minutes until chicken reaches 165°F (74°C). Let rest for 5-10 minutes before serving
Notes
For lighter sauce, substitute some heavy cream with milk or dairy-free alternatives.
Add sautéed vegetables for extra nutrition.
Leftovers can be refrigerated for up to 3-4 days or frozen for up to 2-3 months.
