Description

This Creamy Herb Chicken Bake is a satisfying, simple, and comforting dish that brings the family together with its rich, herby flavor and tender chicken.


Ingredients

1.5 lbs boneless, skinless chicken breasts or thighs
1 tbsp Olive Oil
1 small Onion, finely diced
3 cloves Garlic, minced
8 oz Cream Cheese, softened
½ cup Heavy Cream
½ cup Chicken Broth
2 tbsp Fresh Parsley, chopped (or 1 tbsp dried)
1 tbsp Fresh Thyme, chopped (or ½ tbsp dried)
1 tsp Dried Oregano
½ tsp Salt
¼ tsp Black Pepper
Pinch of Red Pepper Flakes (optional)
½ cup Grated Parmesan Cheese (optional)


Instructions

  1. Preheat your oven to 400°F (200°C). Pat the chicken dry and season with salt and pepper
  2. Sear the chicken in olive oil for 2-3 minutes per side until golden brown. Remove from skillet
  3. In the same skillet, sauté onion until softened, add garlic, then stir in cream cheese until melted. Gradually whisk in heavy cream and chicken broth
  4. Mix in the herbs and seasonings, bring to simmer, then assemble chicken and sauce in a baking dish
  5. Bake for 20-25 minutes until chicken reaches 165°F (74°C). Let rest for 5-10 minutes before serving

Notes

For lighter sauce, substitute some heavy cream with milk or dairy-free alternatives.

Add sautéed vegetables for extra nutrition.

Leftovers can be refrigerated for up to 3-4 days or frozen for up to 2-3 months.
