Description

This Creamy Seafood Gratin with Scallops and Shrimp embodies everything wonderful about home cooking. It's a luxurious dish that's simple to prepare, with tender seafood in a creamy, cheesy sauce that makes it perfect for special occasions or weeknight dinners.

Ingredients

Scale

1 tablespoon Olive Oil
2 tablespoons Unsalted Butter
1 medium Yellow Onion, finely diced
2 cloves Garlic, minced
1/4 cup All-Purpose Flour
2 cups Whole Milk, warmed
1/2 cup Heavy Cream
1/2 teaspoon Salt
1/4 teaspoon Black Pepper
1/4 teaspoon Dried Thyme
Pinch of Nutmeg
1 cup Shredded Gruyère Cheese, divided
1/2 cup Shredded Parmesan Cheese, divided
1 pound Large Shrimp, peeled, deveined, and tails removed
1 pound Sea Scallops, patted dry
1/2 cup Fresh Parsley, chopped, for garnish

Instructions

  1. Prepare the seafood: Ensure shrimp are peeled, deveined, and tails removed. Pat scallops dry and season lightly with salt and pepper
  2. Sauté aromatics: Heat olive oil and butter in a large skillet over medium heat. Add onions and sauté until translucent, then add garlic and cook until fragrant
  3. Make the roux: Sprinkle flour over the onions and garlic, stirring constantly for 1-2 minutes
  4. Whisk in dairy: Gradually add warm milk, whisking until thickened. Stir in cream, salt, pepper, thyme, and nutmeg
  5. Add cheese to sauce: Remove from heat and stir in 3/4 cup Gruyère and 1/4 cup Parmesan until melted
  6. Add seafood: Fold shrimp and scallops into the cheese sauce
  7. Assemble and top: Transfer to an oven-safe dish if necessary, and sprinkle remaining cheeses on top
  8. Bake: Preheat oven to 375°F and bake for 20-25 minutes until bubbly and golden brow
  9. Rest and serve: Let cool for 5-10 minutes, then garnish with parsley and serve

Notes

Ensure seafood is patted dry to prevent a watery sauce.

Taste the sauce before adding seafood to adjust seasoning.
