Description

Creamy Shrimp and Grits is a comforting and hearty dish that features creamy, savory grits topped with succulent sautéed shrimp in a rich sauce. It's perfect for busy weeknights and brings family together around the dinner table.

4 cups Vegetable Broth
1 cup Quick-Cooking Grits
1/2 cup Milk
1/2 cup Shredded Cheddar Cheese
1/4 cup Unsalted Butter
Salt to taste
Freshly Ground Black Pepper to taste
1.5 pounds Large Shrimp, peeled and deveined
2 tablespoons Olive Oil
1 medium Yellow Onion, finely diced
2 cloves Garlic, minced
1/2 cup Chicken Broth
1/4 cup Heavy Cream
1 teaspoon Smoked Paprika
1/2 teaspoon Dried Thyme
1/4 teaspoon Cayenne Pepper (optional)
2 tablespoons Fresh Parsley, chopped (for garnish)


Instructions

  1. Bring the vegetable broth to a boil in a medium saucepa
  2. Slowly whisk in the grits and reduce heat to low. Cover and simmer for 5-7 minutes, stirring occasionally
  3. Stir in the milk, cheddar cheese, and butter until creamy. Season with salt and pepper
  4. In a large skillet, heat olive oil over medium heat. Sauté the onion until translucent, about 5-7 minutes
  5. Add garlic, smoked paprika, thyme, and cayenne; cook for another minute
  6. Pour in chicken broth and bring to a simmer. Stir in heavy cream and simmer for 2-3 minutes
  7. Add shrimp and cook until pink and opaque, about 2-4 minutes. Adjust seasonings as necessary
  8. Serve the creamy grits topped with the sautéed shrimp and garnish with parsley

Notes

For stone-ground grits, adjust cooking time and liquid accordingly.

Feel free to substitute proteins or add more vegetables to suit your tastes.
