Description

Creamy Tomato Spinach Pasta is a comforting dish that combines the rich, tangy sweetness of tomatoes with the delicate earthiness of spinach, all enveloped in a creamy sauce. Ingredients

1 pound Pasta
2 tablespoons Olive oil
4 cloves Garlic, minced
1 (28-ounce) can Crushed tomatoes
1 cup Vegetable broth
1/2 cup Heavy cream
1/2 cup Freshly grated Parmesan cheese
5 ounces Fresh spinach
1/2 teaspoon Dried oregano
1/4 teaspoon Red pepper flakes
Salt to taste
Freshly ground black pepper to taste
Fresh basil or parsley, chopped for garnish


Instructions

  1. Bring a large pot of salted water to a rolling boil. Add pasta and cook according to package directions until al dente. Reserve 1 cup of pasta water and drai
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes, sauté for about 1 minute until fragrant
  3. Pour in crushed tomatoes and vegetable broth. Stir in dried oregano. Simmer for 10-15 minutes
  4. Stir in heavy cream and grated Parmesan cheese until smooth
  5. Add fresh spinach in batches, stirring until wilted. Season with salt and pepper
  6. Add cooked pasta to the sauce, tossing to coat. If the sauce is too thick, add reserved pasta water until desired consistency is reached
  7. Serve immediately, garnished with extra Parmesan cheese and fresh herbs

Notes

Reserve pasta water to adjust sauce consistency if needed.

For a dairy-free version, substitute heavy cream with coconut milk and Parmesan with nutritional yeast.
