Ingredients
1 tablespoon Olive Oil
1 medium Onion, finely chopped
3 cloves Garlic, minced
1 (28-ounce) can Diced Tomatoes, undrained
1 cup Vegetable or Chicken Broth
1/2 teaspoon Dried Italian Seasoning
1/4 teaspoon Red Pepper Flakes (optional)
Salt and Black Pepper, to taste
1 (20-ounce) package Fresh or Frozen Cheese Tortellini
1 cup Heavy Cream
1/2 cup Grated Parmesan Cheese, plus more for serving
2 cups Fresh Spinach (or 1/2 cup fresh basil, chopped)
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until soft, about 3-5 minutes. Stir in the minced garlic and red pepper flakes, cooking for 1 more minute
- Add the undrained diced tomatoes, broth, and Italian seasoning to the skillet. Simmer for 5-7 minutes to meld the flavors
- Add the tortellini to the skillet, stirring gently. Cook for 5-7 minutes or according to package directions until al dente
- Reduce the heat and stir in the heavy cream and Parmesan cheese until smooth and creamy
- Add the fresh spinach and stir until just wilted
- Season with salt and pepper to taste; serve immediately with additional Parmesan if desired
