Description

1 medium Onion, finely chopped
3 cloves Garlic, minced
1 (28-ounce) can Diced Tomatoes, undrained
1 cup Vegetable or Chicken Broth
1/2 teaspoon Dried Italian Seasoning
1/4 teaspoon Red Pepper Flakes (optional)
Salt and Black Pepper, to taste
1 (20-ounce) package Fresh or Frozen Cheese Tortellini
1 cup Heavy Cream
1/2 cup Grated Parmesan Cheese, plus more for serving
2 cups Fresh Spinach (or 1/2 cup fresh basil, chopped)


Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until soft, about 3-5 minutes. Stir in the minced garlic and red pepper flakes, cooking for 1 more minute
  2. Add the undrained diced tomatoes, broth, and Italian seasoning to the skillet. Simmer for 5-7 minutes to meld the flavors
  3. Add the tortellini to the skillet, stirring gently. Cook for 5-7 minutes or according to package directions until al dente
  4. Reduce the heat and stir in the heavy cream and Parmesan cheese until smooth and creamy
  5. Add the fresh spinach and stir until just wilted
  6. Season with salt and pepper to taste; serve immediately with additional Parmesan if desired

Notes

Reserve pasta water to loosen the sauce if needed.
