Ingredients
2 large Russet potatoes
½ medium yellow onio
1 large egg
¼ cup all-purpose flour
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon garlic powder
2 tablespoons olive oil
Optional: Fresh parsley or chives
Instructions
- Prepare the potatoes and onion by peeling and grating them
- Remove excess moisture from the grated potatoes and onion using a clean towel
- Combine the dry potato and onion mixture with the egg, flour, salt, pepper, and garlic powder in a large bowl
- Form the mixture into small, flat patties about ½ inch thick
- Preheat the air fryer to 375°F (190°C) and prepare the basket with olive oil
- Arrange the fritters in a single layer in the basket and lightly spray the tops with olive oil
- Air fry for 12-15 minutes, flipping halfway through until golden and crisp
- Serve immediately, garnished with fresh parsley or chives if desired
