Description

Crispy Buffalo Chicken Bites are golden, crunchy, and bursting with tangy heat, perfect for game nights, quick dinners, or as a flavorful snack.

1.5 pounds Boneless, Skinless Chicken Breast or Thighs, cut into 1-inch pieces
1 cup All-Purpose Flour
1 teaspoon Garlic Powder
1 teaspoon Onion Powder
1/2 teaspoon Smoked Paprika
1/2 teaspoon Salt
1/4 teaspoon Black Pepper
2 large Eggs, lightly beate
1/4 cup Milk
1/2 cup Hot Sauce
1/4 cup Unsalted Butter, melted
1 tablespoon Apple Cider Vinegar (optional)
1 teaspoon Honey or Maple Syrup (optional)
Cooking Spray or 1 tablespoon Oil for Baking/Air Frying


Instructions

  1. Prepare the Chicken: Pat chicken pieces dry with paper towels
  2. Set Up Dredging Stations: In one bowl, whisk flour, garlic powder, onion powder, smoked paprika, salt, and pepper. In another bowl, beat eggs and milk
  3. Coat the Chicken: Dredge chicken pieces in flour, dip in egg mixture, and return to flour for a second coating
  4. Prepare for Cooking: Preheat oven to 400°F (200°C) and prepare a baking sheet
  5. Cook the Chicken: Bake for 20-25 minutes, flipping halfway, until crispy and cooked through
  6. Make the Buffalo Sauce: Melt butter and mix with hot sauce, apple cider vinegar, and honey/maple syrup
  7. Toss and Serve: Toss cooked chicken with buffalo sauce and serve immediately
