Crispy Smashed Potatoes are an incredibly flavorful and satisfying side dish that combines a creamy interior with a crunchy exterior, infused with garlic and herbs.

1.5 pounds small potatoes
3 tablespoons Olive oil
3 cloves Garlic, minced
1 tablespoon Fresh rosemary, chopped
1 teaspoon Sea salt
1/2 teaspoon Black pepper
Pinch of red pepper flakes
Fresh parsley, chopped (for garnish)
Instructions
- Prepare the Potatoes: Thoroughly wash the small potatoes without peeling them
- Boil the Potatoes: Place the potatoes in a large pot, cover with cold water and a pinch of salt. Boil for 15-20 minutes until fork-tender
- Drain and Dry: Drain the potatoes and allow them to sit for a few minutes to dry
- Preheat Oven & Prepare Pan: Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper
- Smash the Potatoes: Arrange the cooked potatoes on the baking sheet and gently smash each potato
- Season and Oil: Whisk together olive oil, minced garlic, chopped rosemary, sea salt, and pepper. Drizzle over the smashed potatoes
- Roast to Perfection: Roast in the oven for 30-40 minutes, flipping halfway through, until golden and crispy
- Serve: Remove from oven, garnish with parsley and serve immediately
