1 cup Shredded Monterey Jack Cheese, divided

4 cups Milk (Whole or 2%)
½ teaspoon Salt (for gravy, or to taste)

2 tablespoons Fresh Parsley, chopped (for garnish, optional)


Instructions

  1. Prepare the Sausage Filling: Heat olive oil in a large skillet over medium heat. Add the ground sausage, breaking it up with a spoon. Cook until browned, about 5-7 minutes. Drain any excess grease. Add the diced onion and bell pepper, cooking until softened, about 5 minutes. Stir in minced garlic and cook for another minute. Set aside
  2. Scramble the Eggs: In the same skillet, whisk eggs, milk, salt, and pepper until combined. Pour into skillet and cook over medium-low heat, stirring gently, until eggs are fluffy and just set. Add to the bowl with the sausage mixture and fold together
  3. Assemble the Enchiladas: Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish. Lay a tortilla flat, add cheese, and spoon ½ cup of the egg and sausage mixture down the center. Roll up tightly and place seam-side down in the baking dish. Repeat
  4. Make the Sausage Gravy: In a separate saucepan, cook remaining sausage over medium heat until browned. Drain grease and sprinkle flour over sausage, stirring to create a roux
  5. Finish the Gravy: Slowly whisk in milk, ensuring no lumps form, and whisk constantly until gravy thickens. Season with salt, black pepper, and optional cayenne
  6. Bake the Enchiladas: Pour the sausage gravy over the assembled enchiladas. Sprinkle remaining cheeses over the gravy
  7. Bake to Perfection: Bake for 20-25 minutes until cheese is melted and golde
  8. Serve: Let rest for 5-10 minutes before serving and garnish with parsley if desired
