12 large Eggs

10 (8-inch) Flour Tortillas
2 cups Shredded Cheddar Cheese, divided
1 cup Shredded Monterey Jack Cheese, divided

4 cups Milk (Whole or 2%)

Instructions
- Prepare the Sausage Filling: Heat olive oil in a large skillet over medium heat. Add the ground sausage, breaking it up with a spoon. Cook until browned, about 5-7 minutes. Drain any excess grease. Add the diced onion and bell pepper, cooking until softened, about 5 minutes. Stir in minced garlic and cook for another minute. Set aside
