Ingredients
- 2 cups cooked chicken, shredded or diced
- 2 cups shredded cheese (cheddar, Monterey Jack, or blend)
- 4 large flour tortillas
- 1/2 cup diced bell peppers (optional)
- 1/4 cup diced onions (optional)
- 1 tablespoon olive oil or butter
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Optional: sour cream, guacamole, salsa for serving
Instructions
1. Heat olive oil or butter in skillet over medium heat.
2. Sauté onions and bell peppers until softened.
3. Add chicken and seasonings, cook until heated through.
4. Remove chicken mixture; place a tortilla in skillet.
5. Add cheese, chicken mixture, and cheese on tortilla.
6. Top with second tortilla and cook until golden and cheese melts.
7. Flip carefully and cook other side until golden.
8. Remove, rest briefly, and slice into wedges.
Notes
Use rotisserie chicken for quick prep.
Combine cheeses for better melting.
Press quesadilla while cooking for even crispiness.
Serve fresh for best flavor and texture.
Reheat in skillet to retain crispiness.
