Description

These easy cinnamon roll cookies capture the gooey, sweet, cinnamony goodness of your favorite bakery classic but in a cookie form, perfect for quick desserts or brunch.


Ingredients

For the Cookies:

  • 1 ½ cups (3 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup packed light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt

For the Cinnamon Swirl:

  • ½ cup (1 stick) unsalted butter, melted
  • 1 cup packed light brown sugar
  • 2 tablespoons ground cinnamon

For the Cream Cheese Glaze:

 

  • 4 ounces cream cheese, softened
  • ¼ cup (½ stick) unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 23 tablespoons milk (or heavy cream)

Instructions

  1. Preheat oven to 375°F (190°C) and prepare baking sheets with parchment paper
  2. Cream together softened butter, granulated sugar, and light brown sugar until fluffy; add eggs and vanilla and mix
  3. In a separate bowl, whisk flour, baking soda, and salt together, then incorporate into wet mixture until combined
  4. Combine melted butter, light brown sugar, and cinnamon for the swirl mixture
  5. Roll out half of the dough, spread half of the cinnamon swirl, roll tightly, and slice into rounds
  6. Place on baking sheets and bake for 8-10 minutes until edges are golde
  7. Cool on sheets before transferring to a wire rack
  8. Make glaze by mixing cream cheese, butter, powdered sugar, vanilla, and milk; drizzle over cooled cookies
