Description

These Easy Homemade Strawberry Muffins are fluffy and filled with juicy strawberries, perfect for breakfast or a snack. They're simple to make with fresh ingredients and can be customized easily.


Ingredients

2 cups All-purpose flour
½ cup Granulated sugar
1 tablespoon Granulated sugar (optional for sprinkling)
2 teaspoons Baking powder
¼ teaspoon Salt
1 large Egg
½ cup Milk
¼ cup Vegetable oil
1 teaspoon Vanilla extract
1 ½ cups Fresh strawberries


Instructions

  1. Preheat your oven to 400°F (200°C) and line a 12-cup muffin tin with paper liners
  2. In a large mixing bowl, whisk together the all-purpose flour, ½ cup of sugar, baking powder, and salt
  3. In a separate bowl, beat the egg, then whisk in the milk, vegetable oil, and vanilla extract
  4. Pour the wet ingredients into the dry ingredients and mix gently until just combined. Fold in the diced strawberries
  5. Divide the batter among the muffin cups, filling each about two-thirds full. Sprinkle optional sugar on top
  6. Bake for 18-22 minutes, or until golden brown and a toothpick comes out clean. Cool for 5 minutes in the tin before transferring to a wire rack

Notes

For frozen strawberries, do not thaw; coat in flour before adding to the batter.
