These Easy Homemade Strawberry Muffins are fluffy and filled with juicy strawberries, perfect for breakfast or a snack. They're simple to make with fresh ingredients and can be customized easily.
Ingredients
2 cups All-purpose flour
½ cup Granulated sugar
1 tablespoon Granulated sugar (optional for sprinkling)
2 teaspoons Baking powder
¼ teaspoon Salt
1 large Egg
½ cup Milk
¼ cup Vegetable oil
1 teaspoon Vanilla extract
1 ½ cups Fresh strawberries
Instructions
- Preheat your oven to 400°F (200°C) and line a 12-cup muffin tin with paper liners
- In a large mixing bowl, whisk together the all-purpose flour, ½ cup of sugar, baking powder, and salt
- In a separate bowl, beat the egg, then whisk in the milk, vegetable oil, and vanilla extract
- Pour the wet ingredients into the dry ingredients and mix gently until just combined. Fold in the diced strawberries
- Divide the batter among the muffin cups, filling each about two-thirds full. Sprinkle optional sugar on top
- Bake for 18-22 minutes, or until golden brown and a toothpick comes out clean. Cool for 5 minutes in the tin before transferring to a wire rack
Notes
For frozen strawberries, do not thaw; coat in flour before adding to the batter.
Add variations like lemon zest or chocolate chips for different flavors.
