Description

This easy one pan ground chicken casserole is a comforting, quick meal that brings the family together. Packed with protein and vegetables, it is a simple solution for busy weeknights and results in minimal cleanup.


Ingredients

  • 1 tablespoon olive oil
  • 1 lb ground chicken
  • 1 medium yellow onion, chopped
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (14.5 ounce) can diced tomatoes, drained
  • 1 (24 ounce) jar marinara sauce
  • 2 cups cooked white or brown rice
  • 2 cups shredded mozzarella cheese, divided
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Grab a large, oven-safe skillet
  2. Heat the olive oil in the skillet over medium-high heat. Add the chopped onion and bell pepper. Sauté for 5-7 minutes
  3. Add the minced garlic and cook for another minute until fragrant
  4. Add the ground chicken to the skillet. Cook until it’s no longer pink, approximately 6-8 minutes. Drain any excess liquid
  5. Stir in the Italian seasoning, salt, black pepper, diced tomatoes, and marinara sauce. Bring to a gentle simmer
  6. Remove the skillet from the heat. Stir in the cooked rice and one cup of shredded mozzarella cheese
  7. Smooth the top and sprinkle the remaining mozzarella cheese over the mixture
  8. Bake for 15-20 minutes until the cheese is melted and bubbly. Let it rest for 5 minutes before serving. Garnish with parsley

Notes

For a low-carb version, replace rice with cauliflower rice.
