This easy one pan ground chicken casserole is a comforting, quick meal that brings the family together. Packed with protein and vegetables, it is a simple solution for busy weeknights and results in minimal cleanup.

- 1 tablespoon olive oil
- 1 lb ground chicken
- 1 medium yellow onion, chopped
- 1 red bell pepper, chopped
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (14.5 ounce) can diced tomatoes, drained
- 1 (24 ounce) jar marinara sauce
- 2 cups cooked white or brown rice
- 2 cups shredded mozzarella cheese, divided
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C). Grab a large, oven-safe skillet
- Heat the olive oil in the skillet over medium-high heat. Add the chopped onion and bell pepper. Sauté for 5-7 minutes
- Add the minced garlic and cook for another minute until fragrant
- Add the ground chicken to the skillet. Cook until it’s no longer pink, approximately 6-8 minutes. Drain any excess liquid
- Stir in the Italian seasoning, salt, black pepper, diced tomatoes, and marinara sauce. Bring to a gentle simmer
- Remove the skillet from the heat. Stir in the cooked rice and one cup of shredded mozzarella cheese
- Smooth the top and sprinkle the remaining mozzarella cheese over the mixture
- Bake for 15-20 minutes until the cheese is melted and bubbly. Let it rest for 5 minutes before serving. Garnish with parsley
Notes
For a low-carb version, replace rice with cauliflower rice.
