1.5 pounds Boneless Skinless Chicken Breasts, cut into 1-inch pieces
1 tablespoon Olive Oil
1 large Red Bell Pepper, cored and chopped
1 large Green Bell Pepper, cored and chopped
½ cup Yellow Onion, chopped
3 cloves Garlic, minced
1 tablespoon Fresh Ginger, grated
1 (20-ounce) can Pineapple Chunks, undrained
¼ cup Soy Sauce
2 tablespoons Brown Sugar
1 tablespoon Apple Cider Vinegar
1 teaspoon Sesame Oil
2 tablespoons Cornstarch
¼ cup Water
3 cups Cooked Jasmine or Basmati Rice, for serving
2 tablespoons Chopped Green Onions, for garnish
1 teaspoon Sesame Seeds, for garnish (optional)


Instructions

  1. Prepare the Chicken: Cut the chicken breasts into 1-inch pieces and pat dry
  2. Make the Sauce: Whisk together the reserved pineapple juice, soy sauce, brown sugar, apple cider vinegar, and sesame oil in a bowl. Prepare a cornstarch slurry
  3. Cook the Chicken: Heat olive oil in a skillet over medium-high heat. Cook the chicken until browned, then remove from skillet
  4. Sauté Aromatics & Veggies: Add more oil if needed, then cook the bell peppers and onion until softened. Add garlic and ginger for one more minute
  5. Combine & Simmer: Return chicken to the skillet and pour sauce mixture over. Bring to a gentle simmer
  6. Thicken the Sauce: Add cornstarch slurry slowly while stirring until sauce thickens
  7. Add Pineapple: Stir in pineapple chunks and cook for another minute
  8. Serve: Serve over hot rice and garnish with green onions and sesame seeds

Notes

Feel free to substitute chicken with shrimp or tofu.

For extra fiber, consider brown rice instead of white.
