Ingredients
1 tablespoon Olive Oil
1 small Yellow Onion, finely diced
1 cup Chopped Fresh Spinach
1/2 cup Sliced Mushrooms
1/2 cup Chopped Bell Peppers
1/4 cup Crumbled Feta Cheese
1/4 teaspoon Garlic Powder
Pinch Red Pepper Flakes (optional)
Salt to taste
Black Pepper to taste
10 large Egg Whites
2 tablespoons Fresh Parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C) and prepare an oven-safe non-stick skillet
- Heat the olive oil in the skillet over medium heat and sauté the diced onion for 3-4 minutes until translucent
- Add bell peppers, mushrooms, and garlic powder; cook for another 5-7 minutes until softened. Then, stir in the spinach and season with salt, pepper, and optional red pepper flakes
- In a bowl, whisk the egg whites with a pinch of salt and pepper until light and frothy
- Pour the egg whites over the cooked vegetables in the skillet and sprinkle crumbled feta on top. Cook on the stovetop on low heat for 3-5 minutes until edges set
- Transfer the skillet to the oven and bake for 12-15 minutes until set in the center and lightly golde
- Let rest for 5 minutes before slicing. Garnish with parsley and serve warm
