Description

A light and nutritious Egg White Frittata packed with vibrant flavors and lean protein, perfect for breakfast, lunch, or dinner.


Ingredients

1 tablespoon Olive Oil
1 small Yellow Onion, finely diced
1 cup Chopped Fresh Spinach
1/2 cup Sliced Mushrooms
1/2 cup Chopped Bell Peppers
1/4 cup Crumbled Feta Cheese
1/4 teaspoon Garlic Powder
Pinch Red Pepper Flakes (optional)
Salt to taste
Black Pepper to taste
10 large Egg Whites
2 tablespoons Fresh Parsley, chopped (for garnish)


Instructions

  1. Preheat your oven to 375°F (190°C) and prepare an oven-safe non-stick skillet
  2. Heat the olive oil in the skillet over medium heat and sauté the diced onion for 3-4 minutes until translucent
  3. Add bell peppers, mushrooms, and garlic powder; cook for another 5-7 minutes until softened. Then, stir in the spinach and season with salt, pepper, and optional red pepper flakes
  4. In a bowl, whisk the egg whites with a pinch of salt and pepper until light and frothy
  5. Pour the egg whites over the cooked vegetables in the skillet and sprinkle crumbled feta on top. Cook on the stovetop on low heat for 3-5 minutes until edges set
  6. Transfer the skillet to the oven and bake for 12-15 minutes until set in the center and lightly golde
  7. Let rest for 5 minutes before slicing. Garnish with parsley and serve warm
