Description

This Fresh Raspberry Tiramisu is a delightful twist on the classic Italian dessert, infused with the tart sweetness of fresh raspberries, layered with creamy mascarpone and coffee-soaked ladyfingers. Ingredients

16 ounces Mascarpone cheese, chilled
4 large Eggs, separated
¾ cup Granulated sugar, divided
1 teaspoon Pure vanilla extract
½ teaspoon Lemon zest (optional)
1 ½ cups Freshly brewed strong coffee, cooled
1 ½ cups Fresh raspberries, plus extra for garnish
1 package Ladyfingers (78 ounces, about 24-30)
2 tablespoons Unsweetened cocoa powder, for dusting


Instructions

  1. In a large bowl, whisk the egg yolks with ½ cup of granulated sugar until pale yellow and thick
  2. Fold in the chilled mascarpone cheese and vanilla extract until just combined
  3. In a separate bowl, beat egg whites with an electric mixer until soft peaks form, then gradually add the remaining ¼ cup sugar and beat until stiff peaks appear
  4. Gently fold the whipped egg whites into the mascarpone mixture in two additions
  5. Dip each ladyfinger briefly into the cooled coffee, then layer them at the bottom of a 9×13-inch baking dish
  6. Spread half of the mascarpone cream over the ladyfingers, then scatter half of the raspberries over the cream layer
  7. Repeat the process with another layer of coffee-dipped ladyfingers, followed by the remaining mascarpone cream
  8. Scatter the remaining raspberries over the top layer of cream
  9. Cover tightly with plastic wrap and refrigerate for at least 4-6 hours or preferably overnight
  10. Dust the top with cocoa powder before serving
