This Fresh Raspberry Tiramisu is a delightful twist on the classic Italian dessert, infused with the tart sweetness of fresh raspberries, layered with creamy mascarpone and coffee-soaked ladyfingers. It's perfect for any occasion, offering a bright and invigorating taste that feels specially indulgent yet surprisingly easy to make.
Ingredients
16 ounces Mascarpone cheese, chilled
4 large Eggs, separated
¾ cup Granulated sugar, divided
1 teaspoon Pure vanilla extract
½ teaspoon Lemon zest (optional)
1 ½ cups Freshly brewed strong coffee, cooled
1 ½ cups Fresh raspberries, plus extra for garnish
1 package Ladyfingers (7–8 ounces, about 24-30)
2 tablespoons Unsweetened cocoa powder, for dusting
Instructions
- In a large bowl, whisk the egg yolks with ½ cup of granulated sugar until pale yellow and thick
- Fold in the chilled mascarpone cheese and vanilla extract until just combined
- In a separate bowl, beat egg whites with an electric mixer until soft peaks form, then gradually add the remaining ¼ cup sugar and beat until stiff peaks appear
- Gently fold the whipped egg whites into the mascarpone mixture in two additions
- Dip each ladyfinger briefly into the cooled coffee, then layer them at the bottom of a 9×13-inch baking dish
- Spread half of the mascarpone cream over the ladyfingers, then scatter half of the raspberries over the cream layer
- Repeat the process with another layer of coffee-dipped ladyfingers, followed by the remaining mascarpone cream
- Scatter the remaining raspberries over the top layer of cream
- Cover tightly with plastic wrap and refrigerate for at least 4-6 hours or preferably overnight
- Dust the top with cocoa powder before serving
