For the Meatloaf:

  • 2 lbs (900g) lean ground chicken
  • 1 cup Panko breadcrumbs
  • ¾ cup freshly grated Parmesan cheese
  • 1 small yellow onion, finely diced
  • 45 cloves garlic, minced
  • 2 large eggs, lightly beaten
  • ¼ cup fresh parsley, chopped
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For the Glaze:

 

  • ½ cup ketchup
  • 2 tablespoons brown sugar, packed
  • 1 tablespoon balsamic vinegar
  • ½ teaspoon garlic powder

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper
  2. In a large mixing bowl, combine the ground chicken, Panko breadcrumbs, Parmesan cheese, onion, garlic, eggs, parsley, Italian seasoning, salt, and black pepper
  3. Gently mix all the ingredients until just combined. Do not overmix
  4. Shape the mixture into a free-form loaf on the prepared baking sheet, approximately 9×5 inches
  5. In a small bowl, whisk together the ketchup, brown sugar, balsamic vinegar, and garlic powder to create the glaze
  6. Spread half of the glaze over the top and sides of the meatloaf
  7. Bake in the preheated oven for 30 minutes
  8. After 30 minutes, add the remaining glaze on top
  9. Continue to bake for an additional 20-25 minutes or until the internal temperature reaches 165°F (74°C)
  10. Let the meatloaf rest for at least 10 minutes before slicing

Notes

Use freshly grated Parmesan cheese for best flavor.
