Ingredients
For the Meatloaf:
- 2 lbs (900g) lean ground chicken
- 1 cup Panko breadcrumbs
- ¾ cup freshly grated Parmesan cheese
- 1 small yellow onion, finely diced
- 4–5 cloves garlic, minced
- 2 large eggs, lightly beaten
- ¼ cup fresh parsley, chopped
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- ½ teaspoon black pepper
For the Glaze:
- ½ cup ketchup
- 2 tablespoons brown sugar, packed
- 1 tablespoon balsamic vinegar
- ½ teaspoon garlic powder
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper
- In a large mixing bowl, combine the ground chicken, Panko breadcrumbs, Parmesan cheese, onion, garlic, eggs, parsley, Italian seasoning, salt, and black pepper
- Gently mix all the ingredients until just combined. Do not overmix
- Shape the mixture into a free-form loaf on the prepared baking sheet, approximately 9×5 inches
- In a small bowl, whisk together the ketchup, brown sugar, balsamic vinegar, and garlic powder to create the glaze
- Spread half of the glaze over the top and sides of the meatloaf
- Bake in the preheated oven for 30 minutes
- After 30 minutes, add the remaining glaze on top
- Continue to bake for an additional 20-25 minutes or until the internal temperature reaches 165°F (74°C)
- Let the meatloaf rest for at least 10 minutes before slicing
