Description

1 tablespoon White Vinegar
2 teaspoons Pure Vanilla Extract
1 to 2 ounces Red Food Coloring
1 (8 ounce) package Cream Cheese
½ cup Unsalted Butter
4 cups Powdered Sugar
1 teaspoon Pure Vanilla Extract
Pinch of Salt


Instructions

  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners
  2. In a large bowl, whisk together the gluten-free flour, sugar, baking soda, salt, and cocoa powder
  3. In a separate bowl, combine the buttermilk, eggs, vegetable oil, vinegar, vanilla, and food coloring until well mixed
  4. Pour the wet ingredients into the dry ingredients and mix until just combined
  5. Divide the batter among the muffin cups, filling each about two-thirds full
  6. Bake for 18-22 minutes, until a skewer inserted comes out clea
  7. Let the cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely
  8. For frosting, beat the cream cheese and butter until fluffy, then gradually add powdered sugar and mix until smooth. Stir in vanilla and salt
  9. Frost the cooled cupcakes generously
