Description

Gnome Mini Cheesecakes are adorable individual cheesecakes that are rich, creamy, and perfectly portioned. They make an impressive yet simple dessert for any occasion.


Ingredients

1 ½ cups Digestive biscuits, finely crushed
¼ cup Granulated sugar
½ cup Unsalted butter, melted
2 blocks Cream cheese, full fat, softened (8 oz each)
¾ cup Granulated sugar
2 Large eggs, at room temperature
1 teaspoon Pure vanilla extract
½ cup Sour cream or full-fat plain yogurt, at room temperature
Pinch of salt
Optional toppings: Fresh berries, Lemon curd, Chocolate ganache, Whipped cream


Instructions

  1. Preheat your oven to 325°F (160°C). Line a 12-cup muffin tin with paper liners
  2. In a medium bowl, combine the crushed biscuits with ¼ cup sugar. Add melted butter and mix until it resembles wet sand
  3. Divide the crust mixture among the muffin cups and press firmly into the bottom
  4. Optional: Pre-bake the crust for 5-7 minutes for a crispier texture
  5. In a large mixing bowl, beat the cream cheese until smooth. Gradually add ¾ cup sugar and mix until combined
  6. Add the eggs one at a time, mixing gently. Stir in vanilla, sour cream, and a pinch of salt until smooth
  7. Spoon filling evenly over the crusts, filling almost to the top. Tap the tin to release air bubbles
  8. Bake in the preheated oven for 20-25 minutes or until the edges are set and the center jiggles slightly
  9. Turn off the oven and let them cool for 15-20 minutes with the door slightly ajar. Then cool on a wire rack
  10. Refrigerate for at least 4 hours or overnight before serving. Remove liners and add toppings as desired

Notes

Ensure all dairy ingredients are at room temperature for a smoother batter.

Avoid overmixing after adding eggs to prevent cracks.

The cheesecakes can be frozen and stored for up to 1 month.
