Ingredients
2 tablespoons Unsalted Butter
2 large Yellow Onions
2 cloves Garlic
2 cups Jasmine Rice
3 cups Vegetable Broth
1 teaspoon Salt
1/2 teaspoon Black Pepper
Fresh Parsley or Chives
Instructions
- Melt the butter in a large pot over medium heat. Add the sliced onions and sauté for 15-20 minutes until golden brow
- Stir in the minced garlic and cook for another minute
- Rinse the jasmine rice under cold water until the water runs clear
- Add the rinsed rice to the pot and stir to coat with the buttery onion mixture. Cook for 1-2 minutes
- Pour in the vegetable broth and add salt and black pepper. Stir to combine
- Bring to a gentle boil, then reduce heat to the lowest setting and cover. Cook for 15 minutes
- Remove from heat and let it rest for 10 minutes without lifting the lid
- Fluff the rice with a fork and garnish with fresh parsley or chives before serving
Notes
For a dairy-free version, replace unsalted butter with plant-based butter or olive oil.
You can use different types of rice, but adjust liquid and cooking time accordingly.
