Description

Golden Onion Butter Jasmine Rice is a comforting and delicious rice dish featuring sweet caramelized onions, rich butter, and fragrant jasmine rice. It's simple to make and pairs beautifully with a variety of main dishes, making it a versatile staple for busy weeknights.


Ingredients

2 tablespoons Unsalted Butter
2 large Yellow Onions
2 cloves Garlic
2 cups Jasmine Rice
3 cups Vegetable Broth
1 teaspoon Salt
1/2 teaspoon Black Pepper
Fresh Parsley or Chives


Instructions

  1. Melt the butter in a large pot over medium heat. Add the sliced onions and sauté for 15-20 minutes until golden brow
  2. Stir in the minced garlic and cook for another minute
  3. Rinse the jasmine rice under cold water until the water runs clear
  4. Add the rinsed rice to the pot and stir to coat with the buttery onion mixture. Cook for 1-2 minutes
  5. Pour in the vegetable broth and add salt and black pepper. Stir to combine
  6. Bring to a gentle boil, then reduce heat to the lowest setting and cover. Cook for 15 minutes
  7. Remove from heat and let it rest for 10 minutes without lifting the lid
  8. Fluff the rice with a fork and garnish with fresh parsley or chives before serving

Notes

For a dairy-free version, replace unsalted butter with plant-based butter or olive oil.

You can use different types of rice, but adjust liquid and cooking time accordingly.
