Ingredients
2 tablespoons Olive Oil
1 cup Long-grain White Rice
2 cloves Garlic, minced
3 cups Chicken Broth
1 large Lemon, zested and juiced
1/2 teaspoon Salt
1/4 teaspoon Black Pepper
1/4 cup Fresh Dill, chopped
Instructions
- Rinse the long-grain rice under cold running water until the water runs clear. Drain well
- Heat the olive oil in a medium saucepan over medium heat. Add the rinsed rice and toast for 2-3 minutes
- Stir in the minced garlic and cook for 1 minute until fragrant
- Pour in the chicken broth, add salt and pepper, and bring to a boil
- Reduce heat to low, cover, and let simmer for 15 minutes without lifting the lid
- Remove from heat and let sit covered for another 10 minutes
- Fluff the rice with a fork, stir in lemon zest, lemon juice, and chopped dill. Adjust seasonings as needed before serving
