1 cup Long-grain White Rice
2 cloves Garlic, minced
3 cups Chicken Broth
1 large Lemon, zested and juiced
1/2 teaspoon Salt
1/4 teaspoon Black Pepper
1/4 cup Fresh Dill, chopped


Instructions

  1. Rinse the long-grain rice under cold running water until the water runs clear. Drain well
  2. Heat the olive oil in a medium saucepan over medium heat. Add the rinsed rice and toast for 2-3 minutes
  3. Stir in the minced garlic and cook for 1 minute until fragrant
  4. Pour in the chicken broth, add salt and pepper, and bring to a boil
  5. Reduce heat to low, cover, and let simmer for 15 minutes without lifting the lid
  6. Remove from heat and let sit covered for another 10 minutes
  7. Fluff the rice with a fork, stir in lemon zest, lemon juice, and chopped dill. Adjust seasonings as needed before serving
