This Greek Yogurt Banana Bread is a moist and tender twist on classic banana bread. The Greek yogurt adds a rich tang and extra moisture for a perfectly fluffy loaf.
Ingredients
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 ripe bananas, mashed
- 1/3 cup melted butter
- 1/2 cup Greek yogurt
- 3/4 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- Optional: 1/2 cup chopped walnuts or chocolate chips
Instructions
1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
2. In a medium bowl, whisk together flour, baking soda, and salt.
3. In a large bowl, mix mashed bananas with melted butter.
4. Stir in Greek yogurt, brown sugar, eggs, and vanilla extract until well combined.
5. Gradually add dry ingredients to wet ingredients, stirring until just combined.
6. Fold in optional walnuts or chocolate chips if using.
7. Pour batter into prepared loaf pan.
8. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Use very ripe bananas for best sweetness and moisture.
Do not overmix batter to keep bread tender.
Let bread cool before slicing to avoid crumbling.
Store bread tightly wrapped at room temperature up to 3 days or refrigerate for up to a week.
Freeze slices individually for longer storage.
