Ingredients

Scale

1.5 lbs Ground Chicken (lean or regular)

1/2 cup Finely Chopped Red Onio
3 cloves Garlic (minced)
1/4 cup Fresh Parsley (finely chopped)
2 tablespoons Fresh Mint (finely chopped)
1 tablespoon Dried Oregano
1 teaspoon Ground Cumi
1/2 teaspoon Salt
1/4 teaspoon Black Pepper
Zest of 1 large Lemo
2 tablespoons Fresh Lemon Juice

Optional: 1/4 cup Crumbled Feta Cheese (for extra flavor)

Instructions

  3. Gently mix the ingredients by hand until just combined to avoid overmixing
  4. Form 1.5-2 tablespoons of the mixture into meatballs, about 1.5 inches in diameter
  5. Heat olive oil in a non-stick skillet over medium heat until shimmering
  6. Cook meatballs in batches for 4-6 minutes on each side until golden brown and cooked through
  7. Remove meatballs from the skillet and deglaze with lemon juice if desired
  8. Serve immediately on a platter

Notes

For gluten-free options, use gluten-free breadcrumbs or almond flour.
