4 medium-sized firm apples
1 (8-ounce) round of brie cheese
2 tablespoons unsalted butter
2 tablespoons honey
1 teaspoon fresh thyme leaves
1/2 teaspoon ground cinnamo
1/4 teaspoon nutmeg
a pinch of sea salt
1/4 cup chopped pecans or walnuts (optional)
fresh rosemary sprigs (optional)


Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish
  2. Wash and dry the apples, then make thin slices about 3/4 of the way through each apple
  3. Unwrap the brie cheese and score the top if desired, placing it in the center of the baking dish
  4. Fan out the apple slices and arrange them around the brie
  5. In a small bowl, whisk together melted butter, honey, thyme, cinnamon, nutmeg, and sea salt
  6. Brush the mixture over the fanned slices of each apple
  7. Sprinkle with optional nuts if using
  8. Bake for 30-40 minutes until apples are tender and brie is melted
  9. Let cool slightly before serving garnished with rosemary if desired
