Ingredients
1 ½ cups All-Purpose Flour
1 teaspoon Baking Powder
½ teaspoon Baking Soda
¼ teaspoon Salt
1 teaspoon Ground Cinnamon (optional)
2 large Ripe Bananas, mashed
½ cup Unsweetened Applesauce
¼ cup Maple Syrup or Honey
1 large Egg, room temperature
½ cup Milk (dairy or non-dairy)
1 teaspoon Pure Vanilla Extract
1 cup Fresh Strawberries, hulled and diced
Instructions
- Preheat oven to 375°F (190°C) and line a muffin pan with liners
- In a large bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, and cinnamo
- In a separate bowl, mash the ripe bananas and mix in the applesauce, maple syrup, egg, milk, and vanilla until combined
- Pour the wet mixture into the dry ingredients and fold gently until just combined, then fold in the diced strawberries
- Divide the batter among the muffin cups, filling each about two-thirds full
- Bake for 18-22 minutes until golden and a toothpick comes out clea
- Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely
Notes
Use very ripe bananas for the best flavor and texture.
Do not overmix the batter to keep the muffins light and fluffy.
